There are a lot of things you can do with cranberries. The most common recipe you probably know is cranberry sauce, often served during Thanksgiving. One of my favorite recipes to make when we have cranberries at home is whipped cranberry butter which I learned from MizzeryBell‘s YouTube video. I was absolutely shocked when I first made this spread because it turned out incredibly delicious. It has the perfect balance of sweet, salty, and tart flavors. It pairs well with a slice of bread, warm rolls, mashed potatoes, biscuits, muffins, or pancakes. Fresh cranberries are available in local grocery stores until mid-December, but some grocery stores carry frozen cranberries year-round. If you love butter and cranberries, make sure to try this recipe at home–I am sure you will love it.
Place a saucepan over heat. Add 1 1/2 cups of cranberries, 1/4 cup of honey, one tablespoon of orange juice, and 1/2 lemon zest. Cook until the cranberries burst and the sauce becomes thick. Stirring often. Turn off the heat, then let it cool completely.
Add 2 sticks of softened salted butter in a bowl, and whisk until creamy.
Transfer the cranberry mixture to the creamed butter, then whisk until well combined. Add a pinch of cinnamon and nutmeg. Mix to combine.
Serve this cranberry spread with toasted bread, muffins, pancakes, muffins, or biscuits. Enjoy!
