Ingredients for Southwest Creamed Corn:

  • 8 medium corn, husk and silk removed
  • 3 tbsp of butter, unsalted
  • 2 tbsp of all-purpose flour
  • 3 cloves of garlic, minced
  • ¼ cup of poblano chiles
  • ½ tsp of kosher salt
  • ½ tsp of black pepper
  • ½ tsp of paprika
  • 1 tbsp of white sugar
  • 1 cup of heavy cream
  • Juice of 1 lime
  • 1 cup of cotija cheese

How to Make Southwest Creamed Corn:

Step 1

Carefully slice off the corn kernels using a small paring knife, then transfer them to a large bowl, and scrape off any juices from the cob using the back of the knife. Place a saucepan on a stove over medium heat, then add the butter and flour, and whisk them continuously for about 2 minutes until the raw taste of the flour is gone.

Step 2

Add the garlic and poblano chiles, then stir and cook for another 2 minutes, add the corn kernels, salt, pepper, paprika, and sugar. Give them a good stir to combine, then cook them for another 3 to 4 minutes or until the corn is completely coated, pour in the heavy cream, and cook for an additional 10 to 15 minutes or until thickened and cooked through.

Step 3

Make sure to stir them frequently to prevent bubbling, then remove the pan from the heat, and add ½ cup of cotija cheese followed by the lime juice. Stir them until melted and combined, then adjust the seasoning to taste, and garnish with the remaining cotija cheese along with some chopped cilantro and paprika. Serve while warm and enjoy!
