Step 1
Place a 4.5-quart soup pot on a stove over medium-high heat, then heat the olive oil, and add the ground beef. Season it with salt and pepper, then break it apart, and let it cook for about 3 minutes.
Step 2
Add the onions, then cook them for an additional 5 minutes or until browned and cooked through, and then drain off the excess grease. Reduce the heat to medium, then add the garlic, and give them a good loss to combine.
Step 3
Add the diced bell peppers, then cook them for another 3 minutes until softened, and add all of the seasonings followed by the diced tomatoes, tomato sauce, Worcestershire sauce, hot sauce, and brown sugar.
Step 4
Stir everything until well combined, then pour in the beef broth and chicken broth, and bring it to a gentle boil before reducing the heat to a simmer. Partially cover the pot, then let it simmer for about 30 minutes while stirring occasionally, and then turn off the heat.
Step 5
Remove the pot from the stove, then add the shredded cheese, and stir the soup until the cheese has melted. Spoon the rice into serving bowls, then ladle the soup on top, and serve. Enjoy!
