Who says pumpkin pie is difficult to make? This recipe by Southern Living will prove you wrong! This recipe is probably the easiest pumpkin pie ever. You will surely be amazed at how straightforward the steps are. Just mix all the filling ingredients, pour into the crust, and your pie is ready for baking. It’s so delicious and has the perfect consistency.

This recipe uses refrigerated pie crusts and a can of pumpkin, making the process much easier and faster. But if you have time and love baking, you can make your own pie crust. Here’s an easy recipe: How To Make An Easy Homemade Pie Crust. It is also a Southern version of pumpkin pie as it uses buttermilk instead of evaporated milk.
For garnish:
Take a pie plate and place the refrigerated pie crust on top. Pinch the sides just like a homemade crust. Line it with parchment paper and weigh it down with pie weights. Bake at 425F for 15 minutes.
Make the filling. In a bowl, add the pumpkin, sugar, salt, eggs, egg yolk, buttermilk, vanilla extract, and cinnamon. Stir until well combined.
Once the crust is done baking, hold the parchment paper to remove the pie weights.
Take the crust and pour the filling.
Place it back into the oven at the same temperature, 425F for 10 minutes, then turn the temperature down to 325F and let it finish baking for about 35 to 40 minutes. It should be puffed around the edges and a bit jiggly in the center.
Once done baking, place on a cooling rack for about an hour.
Garnish with whipped cream, then sprinkle with freshly grated cinnamon.
