For the cobbler batter:
Start by preparing the apples. Peel the skin, remove the core, and slice them into thin pieces.
Preheat your oven to 350F and spray a 9 x 13 baking pan with nonstick cooking spray.
Get a medium mixing bowl. Add apple slices, 1/2 cup of brown sugar, 2 tablespoons of cornstarch, 1 teaspoon of ground cinnamon, 1/4 teaspoon of nutmeg, and 1/2 teaspoon of vanilla extract. Toss to combine, then transfer into the prepared pan. Spread them out in an even layer.
In a large mixing bowl, add 2 cups of all-purpose flour, 3/4 cup of powdered sugar, 1 tablespoon of baking powder, and 1 teaspoon of salt. Stir to combine. Using a pastry cutter, cut in the butter until it looks like sand or cornmeal. Alternatively, you can use a food processor.
Pour half and half into the flour mixture and stir until well combined. It should have a thick consistency.
Scoop the batter in large clumps on top of the seasoned apples.
Place it inside the preheated oven and bake for an hour.
