Jalapeño poppers are one of the best dishes that you can serve for an appetizer or snack, and it’s perfect for any party, gathering, or cookout. But, if you’re not a huge fan of jalapeños and are more of a meat lover, then you’ll surely love this incredible recipe by Chiles and Smoke on YouTube.

Instead of stuffing jalapeños, you will use sausages, then you will fill them with homemade pimento cheese, and wrap them with bacon slices. Once you’re done cooking these poppers on the grill, make sure to get one before taking them inside because they’re so good that they will be gone in just minutes.

Pimento Cheese
Step 1
In a medium-sized mixing bowl, add the cream cheese, then break it and stir until soft and creamy, add the mayonnaise, and mix them until well combined.
Step 2
Add the paprika, mustard, salt, sugar, and pepper, then give them a good mix, add the shredded cheddar, and keep stirring until incorporated.
Step 3
Add the pimentos and pickled jalapeños, then gently fold them into the cream mixture, cover the bowl, and proceed to prepare the sausage.
Step 4
Slice a pocket in the middle of the sausage casing as demonstrated in the video, then open it up, and push the meat onto the sides making sure not to push it outside the casing.
Step 5
Fill each sausage pocket with the pimento cheese, then add the sliced jalapeños, and carefully wrap it with 2 slices of bacon.
Step 6
Season all sides generously with the spice rub, then do the same for the remaining sausages and place them in the refrigerator for at least an hour uncovered.
Step 7
Preheat your grill or smoker for indirect cooking at 350°F, then place the sausage poppers, and let them cook for about 45 to 60 minutes or until the bacon is nice and crispy. Serve and enjoy!
