For the homemade sauce:
Start by heating the oven to 325F and greasing an 8″ round ovenproof dish.
In a standing mixer, add butter and sugar and beat until light and fluffy.
Slowly add the golden syrup, treacle, eggs, and vanilla to the butter and egg mixture and continue to mix. Once combined, turn the speed to slow and add the flour. Turn it off once mixed.
Add 1 cup of water and the dates to a small saucepan and bring it to a simmer. After a few minutes, add the bicarbonate of soda. The mixture will foam up so be careful.
Transfer it to the flour mixture while still hot. Mix well then pour into the prepared cake tin.
Place inside the preheated oven and bake for 45 to 50 minutes or until firm and slightly springy to the touch.
Make the toffee sauce. In a small pan, add the butter, sugar, and golden syrup. Melt until the sugar has dissolved. Mix in the cream, vanilla extract, and salt. Bring the mixture to a steady simmer for 3 minutes until the sauce has thickened. Once done, remove from heat.
Drizzle the sticky toffee sauce all over the pudding and serve with the tub of vanilla ice cream.
