This recipe is a healthy alternative to traditional french fries. It’s the perfect snack to munch on without feeling guilty. Make sure to grab a few pieces of sweet potatoes at the grocery store and enjoy them while they are in season.

Start by rinsing and peeling the sweet potatoes. Cut a small sliver off the edge of the potatoes lengthwise to make one side flat. Turn it over so it lays flat. Next, cut it lengthwise into 4 to 5 long slices, then cut each slice into 3 to 4 fries.
Transfer the fries to a bowl of water and soak for an hour. This step will remove excess starch from the potatoes. Once done, rinse and dry them off.
Preheat your oven to 425F.
In a large bowl, add the fried and cornstarch. Toss until they are evenly coated. Next, drizzle oil and toss to coat. Season with pepper, paprika, garlic powder, and brown sugar. Toss to season the fries evenly.
Line a baking sheet with parchment paper or aluminum foil and grease with nonstick cooking spray. Transfer the fries and lay them in a single layer. Make sure not to overcrowd the pan and space them evenly. Work in batches if needed.
Place them in the preheated oven and bake for 15 minutes. Flip the fries with tongs, then bake them for an additional 10 to 15 minutes.
Transfer to your serving plate. Sprinkle salt on top and garnish with shredded parmesan and chopped parsley, if preferred. Serve with your favorite dipping sauce. Enjoy!
