Potatoes are delicious and there are a lot of ways that you can cook them, and they always taste yummy every time, no matter what dish they come into. But for me, the best way to cook potatoes is by using the meat itself for mashed potatoes, stuffing the skin with bacon and cheese, and then baking them to crispy perfection!

Step 1
Clean the potatoes, then pierce holes all over them using a fork, and place them in a large mixing bowl. Drizzle the olive oil and sprinkle some salt, then mix them until well coated, and place them on a baking sheet lined with aluminum foil making sure to space them apart evenly.
Step 2
Place them in an oven preheated at 350°F, then let them bake for about 60 minutes, and then while waiting, prepare the green onions, jalapeños, and bacon. After an hour of baking, remove the potatoes from the oven, then let them cool down, and cut them in half lengthwise.
Step 3
Scoop up the meat of the potatoes and set it aside in a bowl (you can use this for mashed potatoes or other dishes you want to make), then in a small bowl, mix the olive oil, parsley, seasoned salt, cayenne pepper, garlic powder, paprika, and black pepper until uniform, and brush it over the potato skins.
Step 4
Put them back in the oven and let them bake for about 15 minutes until crispy, then fill them with green onions, cheese, and bacon, and allow them to bake for another 15 minutes. Serve and enjoy!
