This recipe by Smokin’ & Grillin with AB is an attempt to imitate the famous potato skins of TGI Fridays. These yummy potatoes loaded with cheese and bacon bits were covered in olive and butter, then oven-baked! Try making these mouth-watering potato skins now and share them with your family.

Materials:

  • 6-8 pieces of Russet potatoes
  • Cheddar cheese
  • Mozzarella cheese
  • Bacon
  • Green onion
  • Sour cream
  • Butter
  • Fresh black pepper
  • Branch and vine butter olive oil
  • Branch and vine bacon sea salt

Directions:

Step 1

Wash the potatoes and scrub off all the dirt, then pat it dry. Preheat your oven to 425° while preparing the other ingredients. Grab a fork and start poking holes all over each potato to let the steam out when you bake them, then place the potatoes in a large bowl, drizzle some olive oil, and start tossing around until each potato is well coated. Sprinkle a few pinches of bacon sea salt according to taste, then give them a nice toss to distribute the seasoning well, and place it on the rack of a preheated oven. Let the potatoes bake for about 40 minutes to 1 hour. Fry the bacon, then cut them into small bits, and chop the green onions as well. Once the potatoes are done cooking, take them out of the oven, then cut them in half, and open them up. Grab a spoon and start scooping out some of the fillings, then transfer them to a mixing bowl. Set this aside and use it for your other recipes later.

Step 2

Preheat your oven to 375°, then brush the potato boats with melted butter inside, place them on the rack of the oven with their hollow side facing down, and bake them for about 10 minutes. Take them out of the oven after 10 minutes, then flip them over, and brush the skin of the potatoes. Place them back into the oven but this time with the hollow side facing up, then bake them for another 10 minutes. Once they are done baking, flip over the potato boats, then fill them with mozzarella cheese, top with cheddar cheese, and some bacon bits. Put them back in the oven for the final baking which would take about 3 to 5 minutes only or just until the cheese has melted. Sprinkle them with fresh black pepper, garnish with green onion, add more cheddar cheese, and top them with some sour cream.
