My parents love broccoli and potatoes and would eat them no matter what form of dish they come into, but one of their favorites is this casserole recipe by Catherine’s Plates on YouTube. This is a very easy, healthy, and delicious dish which is why I always try to serve this at dinner for my family, and they always love how it tastes.

Since this is pretty simple to make it’s easily one of the best and most convenient food ideas to prepare at the last minute or when you just can’t decide about what to make for your weeknight mealtime. If you also want to trick the kids into eating veggies, then I highly recommend that you give this recipe a try.

Ingredients for Potato, Sausage, & Broccoli Casserole:

  • 6 medium Russet potatoes, scrubbed and cut into bite-sized pieces
  • ½ tbsp of salt
  • 1 head of broccoli, cut into bite-sized pieces
  • 12 oz of smoked sausage link, cut into bite-sized pieces
  • 1 medium yellow onion, diced
  • 1 tsp of minced garlic
  • (10.5 oz) can of cream of chicken soup
  • (10.5 oz) can of cream of mushroom soup
  • 10.5 oz of chicken broth
  • 2 tsp of seasoning blend
  • ½ cup of sour cream
  • 8 oz of shredded cheddar cheese, divided

How to Make Potato, Sausage, & Broccoli Casserole:

Step 1

Preheat your oven to 375°F, then grease a 9×13-inch baking dish with nonstick cooking spray, and set it aside. Scrub the potatoes and cut them into bite-sized pieces, then place them in a large pot, and fill it with water until an inch above the potatoes. Place it on a stove over high heat, then add the salt, and give it a good stir.

Step 2

Bring it to a boil, then lower the heat to medium-high, and let it simmer for about 15 minutes or until fork tender. Cut broccoli into florets and then into quarters, then 5 minutes before the potatoes are done cooking, add the broccoli, and let them cook along with the potatoes for the remaining 5 minutes.

Step 3

Drain the potatoes and broccoli, then put them back in the pot, set them aside, and then cut the sausage into bite-sized pieces. Place a large skillet on a stove over medium-high heat, then add 2 tablespoons of oil, and heat it before adding the sausage and onion.

Step 4

Give them a good toss and cook them for about 30 seconds before turning off the heat, then whisk together both cream of soup, chicken broth, seasoning blend, sour cream, and half of the shredded cheese in a large bowl. Put the drained potatoes and broccoli in the prepared baking dish, then add the cooked sausage, onion, and garlic, and pour in the soup mixture.

Step 5

Stir them until well combined, then cover them with aluminum foil, and put them in the preheated oven to bake for about 20 minutes. Remove the foil, then sprinkle the remaining cheese over the top, and continue to let the casserole bake uncovered for an additional 15 minutes until the cheese has melted. Let it sit for a few minutes to cool, then serve, and enjoy!
