Start by placing a strainer over a bowl. Strain the tuna to remove the oil. You can use it for later.
Place a pan over medium heat and add 3 tablespoons of olive oil or oil from the tuna. Once hot, add the finely chopped small onion and roughly chopped garlic. Mix continuously until so that it won’t brown too quickly and evenly saute. Cook for 3 to 4 minutes.
Add the smoked paprika and dried thyme. Mix well.
Add the tomato sauce, then season with freshly cracked black pepper. Stir it and let it simmer for 4 minutes.
Pour the chicken broth and turn the heat to high. Gently mix and let it come to a boil.
Add 8 oz of pasta to the sauce. Mix after every 1 to 2 minutes so it evenly cooks. Cook for 7 to 8 minutes. Mix, then cover with the lid. Let it simmer for 2 to 4 minutes, then remove from heat.
Add the drained tuna to the pasta and chopped parsley. Mix well. Top with grated cheese. Serve and enjoy!
