Ingredients for 70’s Watergate Pistachio Cake:

Cake

  • 1 package of white cake mix
  • (3.4 oz) package of instant pistachio pudding
  • 1 cup of vegetable oil
  • egg whites
  • 1 cup of Sprite
  • ½ cup of chopped pecans, optional

Icing

  • (1.3 oz) package of Dream Whip
  • 1¼ cups of milk, cold
  • (3.4 oz) package of instant pistachio pudding

Topping (optional)

  • Coconut flakes
  • Chopped pecans
  • Maraschino cherries

How to Make 70’s Watergate Pistachio Cake:

Step 1

In a large mixing bowl, add the cake mix and pudding mix, then give them a good whisk, add the eggs, oil, and Sprite, and beat them over medium speed for about 4 minutes. Add the nuts and continue to beat just until the nuts are evenly distributed, then allow it to bake for about 40 to 45 minutes according to the temperature directed on the back of the box.

Step 2

Allow the cake to cool completely, then in a separate large bowl, beat together the Dream Whip and milk over high speed until peaks start to form. Gradually add the pudding mix while beating continuously until light and fluffy, then frost the cake with it, and top it with coconut flakes, chopped pecans, and maraschino cherries. Let it chill in the fridge or serve it immediately and enjoy!
