Do you love bananas and cookies? If you do, you have to try this soft and chewy banana cookie recipe by Sugar Spun Run. It is packed with banana flavor and chocolate chips. Some recipes make the cookies cakey, but this recipe doesn’t. They are soft and chewy!

Making these cookies is super easy! It uses simple baking ingredients and doesn’t require a mixer. Forgotten bananas that turned browned are much better than the spotless yellow ones. Very ripe bananas are easier to mash and sweeter, making them perfect for this recipe.

In a large bowl, add well-mashed banana, melted or cooled butter, brown sugar, granulated sugar, egg yolk, and vanilla extract. Stir until well combined.
In a different bowl, add flour, cornstarch, baking powder, baking soda, salt, and cinnamon. Whisk to combine.
Add the flour mixture to the banana butter mixture in 3 to 4 batches, mixing after every addition.
Stir in chocolate chips until well combined.
Cover the mixing bowl with cling wrap and refrigerate for 30 to 60 minutes or up to 24 hours.
Once the dough is almost finished chilling, preheat the oven to 350F and line the baking sheet with parchment paper.
Scoop 1 1/2 tablespoons of the dough and drop on prepared baking sheet. Space them at least 2″ apart.
Place inside the preheated oven and bake at 350F for 12 to 14 minutes. Allow it to cool for 5 minutes on the baking sheet, then transfer to a cooling rack to cool completely.
