Ingredients for Cheesy Summer Squash Casserole:

  • 1 tbsp of butter
  • 5 cups of Summer squash, sliced
  • 1 cup of onion, finely diced
  • 3 cloves of garlic, grated
  • Salt and pepper, to taste
  • 1 cup of heavy cream
  • eggs, beaten
  • 1 cup of cheddar cheese, grated
  • 1/3 cup of parmesan cheese, grated
  • 1 tsp of dry thyme
  • Zest and juice if ½ lemon
  • 1½ cups of cooked rice
  • ½ cup of Ritz crackers, roughly crumbled

How to Make Cheesy Summer Squash Casserole:

Step 1

Preheat your oven to 350°F, then place a large frying pan on a stove over medium-high heat, add the butter, and let it melt.

Step 2

Add the squash, onion, and garlic, then give them a good toss, and cook them for about 8 to 10 minutes or until soft.

Step 3

Season them with salt and pepper to taste, then in a separate bowl, mix the cream, eggs, cheddar cheese, parmesan cheese thyme, and lemon zest until combined, and set them aside.

Step 4

Turn off the heat and remove the frying pan from the stove, then add the rice, and give them a good mix until well combined.

Step 5

Add the lemon juice along with more salt and pepper, then mix them until combined, and transfer the mixture to an 8×8-inch baking dish.

Step 6

Pour the cream mixture into the vegetables and rice mixture, then mix them well, and sprinkle the Ritz cracker crumbles on top.

Step 7

Place it in the preheated oven to bake for about 35 to 40 minutes, then let it cool for around 3 to 5 minutes, and serve. Enjoy!
