I can’t think of a more easier and quicker pie than this Atlantic beach pie from Food52 on YouTube. Invented by the famous chef Bill Smith, this pie only needs six ingredients to make! It’s quick, easy, and of course, super delicious. It’s one of my favorite pie recipes, and I frequently make this as my family loves it so much.

Ingredients:

Crust:

  • 1 1/2 sleeves of saltine crackers
  • 1/2 cup softened unsalted butter
  • 3 tbsp sugar

Filling:

  • 1 (14 oz) can sweetened condensed milk
  • 4 egg yolks
  • 1/2 cup lemon or lime juice
  • fresh whipped cream, for garnish
  • coarse sea salt, for garnish

Directions:

Step 1

Preheat your oven to 350 degrees F. Next, crush the saltine crackers in a large bowl, then add 3 tbsp sugar and 1/2 cup softened unsalted butter. Combine everything well, then transfer the mixture to your pie plate. Press the mixture down as well as to the sides to form the pie crust, making sure you pack it in as much as you can. Once done, place it in the fridge and chill it for 15 minutes, then bake it in the preheated oven for 18 minutes until golden brown. After baking, let it cool down while you make the filling.

Step 2

In another bowl, combine 1 (14 oz) can sweetened condensed milk and 4 egg yolks. Whisk together well, then stir in 1/2 cup lemon (or lime) juice. Once done, pour the mixture into the prepared crust, then place it in the preheated oven. Bake for 16 minutes or until the filling has set. Serve with whipped cream on top and a sprinkle of coarse sea salt.
