Ingredients:

  • 1 1/2 lb cooked seasoned chicken, shredded
  • 14 – 15 corn tortillas
  • 10 oz Oaxaca cheese
  • 3 tbsp unsalted butter
  • 1/4 diced white onion
  • 2 tbsp diced chipotle peppers in adobo sauce
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup whole milk
  • 4 oz softened cream cheese
  • 1/4 tsp garlic powder
  • 4 – 5 oz grape tomatoes
  • 1 – 2 handfuls of fresh baby spinach
  • salt and pepper to taste

Directions:

Step 1

Melt 3 tbsp unsalted butter in a large pan over medium heat, then add 1/4 diced white onion. Season with a pinch of salt and continue to saute until fragrant. Next, add 2 tbsp diced chipotle peppers in adobo sauce, stir, then add 1/4 cup all-purpose flour. Combine for about a minute to create a roux. After this, add 1 cup of chicken broth and 1/2 cup whole milk. Mix well and let it simmer until it thickens. Once thickened, stir in 4 oz softened cream cheese, then add 4 oz of halved grape tomatoes and 2 handfuls of baby spinach. Mix them in and season with salt and pepper as you like.

Step 2

Heat some oil in a large pan, give the tortillas a light fry, and then transfer them to a baking sheet. Once done, start assembling the enchiladas. Take one tortilla, add some shredded chicken and Oaxaca cheese, then roll it up. Next, add some of the cream sauce to the bottom of the casserole dish, then transfer the enchiladas, seam side down. After this, pour all the cream sauce on top and spread evenly and nicely. Add the rest of the cheese on top, then cover the casserole with aluminum foil. Place it in the preheated oven and bake for 30 to 35 minutes. Serve and enjoy!
