Drain the canned pineapple, let it sit there for five minutes, then transfer it to a lightly oiled foil line pan (save the juice for later.) To the pineapple, add the roughly chopped onion as well as the six garlic cloves. Arrange everything in an even layer, then broil them in the oven under high heat until nicely charred. Once done, let them cool down.
After cooling down, transfer them to a bowl (peel the garlic cloves first) and add 1/4 cup chile garlic sauce, 3 tbsp fresh mint leaves, 1/4 tsp salt, the reserved pineapple, and 1/4 cup seasoned rice vinegar.
