If you still haven’t tried a yummy black-eyed peas casserole, then you’re missing out on an incredible dish, and trust me, this meal is so good that you won’t be able to stop eating it. It’s very easy and quick to prepare, plus, it can feed a crowd which makes it the perfect dish to serve for lunch or dinner with your family.

You can also make this casserole using leftover ingredients that you may have in your fridge or kitchen such as ground beef, sausage, black-eyed peas, or bell pepper halves! Step 1
Place a skillet pan on a stove over medium-high heat, then add the oil, and heat it before adding the sausage. Cook the sausage slices through until nice and brown, then add the bell pepper, and give them a good mix.
Step 2
Cook them for about 3 to 4 minutes or until translucent, then keep cooking for another 3 to 4 minutes, transfer them to a bowl, and set them aside.
Step 3
In the same pan, add the ground beef, then break it apart, and season it with black pepper, garlic powder, and Creole seasoning. Give them a good toss to combine, then cook the beef until brown, and turn off the heat.
Step 4
In a separate large mixing bowl, add the cooked sausage and veggies, ground beef, and rice, then mix them well until evenly combined, and add the cream of mushroom, Rotel tomatoes, and black-eyed peas.
Step 5
Keep mixing them gently to combine, then grease a baking dish with nonstick cooking spray or melted butter, and add in the beef and rice mixture spreading it evenly.
Step 6
Sprinkle the cheese on top, then place the casserole in the oven preheated at 350°F, and let it bake for about 25 to 30 minutes uncovered. Garnish it with freshly chopped parsley, then serve, and enjoy!
