This easy burger onion rings with cheese by Armadillo Pepper BBQ might be my new favorite summer recipe. What’s not to love about this savory snack? It has combined all our favorites in one dish – beef, onion rings, cheese, and bacon. I bet you can’t resist grabbing a bite. It is incredibly delicious. You can definitely taste the melted cheese, barbecue sauce, beef, and seasonings.

The steps in making this burger onion rings is straightforward. The first thing you need to do is cut the onion to make rings. Next, fill the inside of an onion ring with a mixture of beef and cheese. Add another onion ring in the middle, then wrap with bacon slices. Pop it into your smoker and let it cook. Brush it with barbecue sauce, and it’s ready to be enjoyed. Make sure to serve it with the homemade sauce.

For the sauce:
Cut the onion into 1 1/2″ thick rounds, then separate the rings.
Add the ground beef and Colby jack cheese in a large bowl. Mix until well combined.
Get a large onion ring and fill the sides with the ground beef mixture, then insert a smaller onion ring inside just like in the photo below.
Wrap the bacon slices around the burger onion ring to keep them in place.
Sprinkle the beef rub or seasonings on all sides of the burger onion rings.
Place your burger onion rings in your smoker and cook for 1.5 hours at about 250 to 275F. Flip them halfway through and brush them with barbecue sauce. Place the lid back and continue cooking. A few minutes before they are done, flip them over and brush them with barbecue sauce again.
Make the sauce while cooking. Combine all the ingredients in a bowl.
Serve the burger onion rings with the sauce. Enjoy!
