Focaccia bread is probably one of the most delicious types of bread. It is flavorful and has the perfect chew! The top is crispy and golden brown, but the inside is moist and fluffy. It is flavored with extra virgin olive oil, rosemary, garlic, and sea salt. I always order this in my local bakery but have never tried to make it at home until I saw this video tutorial from Kitchen & Craft on YouTube.

Step 1:

In a large bowl, add 4 cups of all-purpose flour and 1/4 teaspoon of active dry yeast. Give everything a quick stir. Make a well in the center. Set aside.

Grab another bowl, and add warm water and sea salt. Give it a quick stir.

Step 2:

Pour the warm water mixture into the flour mixture. Drizzle two tablespoons of extra virgin olive oil. Use your hands to stir the mixture together. You can also use your stand mixer. Just attach the dough hook and mix. It will form into a sticky dough. Transfer to a lightly greased bowl. Grab a quarter to a third of the dough from underneath, lift, and stretch it, until the dough resists. Fold it over onto itself and press down to secure it in place. Do this process 3 to 4 times. Cover and let the dough rest for about 20 minutes, then repeat the entire folding process 3 or 4 more times. It is ready once it is smooth and silky and has some resistance once you poke it.

Step 3:

Cover tightly with plastic wrap. Let the dough set until it doubles in size in the fridge.

Step 4:

Grease a 9 x 13 pan with a tablespoon of extra virgin olive oil. Transfer the dough to the greased pan. Gently press the dough and stretch it into each corner of the rectangular pan. Just wet your hand if it sticks to your hand. Cover with a damp towel or plastic wrap. Let it rise in a place between 80F to 90F for about an hour. An oven with a light left on is the perfect environment for proofing.

Step 5:

Fill a bowl with water and dip your fingers. Start dimpling your focaccia dough. Press straight down to the bottom of the pan. Cover and stick back to the oven. Proof for another 45 minutes to an hour.

Step 6:

Add the toppings. Bake in the middle rack of a 450F preheated oven for about 15 to 20 minutes. When the internal temp hits 190F, your bread is done. Transfer to a wire rack and let it cool for a few minutes.
