Ingredients for Lime Jell-O Poke Cake:

Cake

  • (15.25oz) box of white cake mix, plus ingredients listed in the box
  • (3oz) box of lime Jell-O
  • 1 cup of boiling water
  • ½ cup of cold water

Frosting

  • (3.4oz) package of instant vanilla pudding mix
  • 1 cup of cold milk
  • (8oz) tub of Cool Whip, or other whipped topping
  • Green sprinkles, optional

Step 1

Prepare the cake mix in a 9×13-inch baking dish and bake it according to the package instructions, then once done baking, place it on the counter, and let it cool for about 5 minutes. Using the handle of a wooden spoon, poke holes into the cake making sure they are about 2 inches apart, then set it aside, and prepare the Jell-O mixture.

Step 2

In a large heat-proof bowl, add the lime Jell-O and boiling water, then whisk them together until the gelatin has dissolved, pour in the cold water, and give them a good whisk to combine. Pour the mixture over the cake, then place it in the fridge, and let it chill for about 2 hours.

Step 3

In a large bowl, add the vanilla pudding and milk, then whisk them for about 1 minute, add the whipped topping, and fold them in until fully incorporated. Spread the topping over the chilled cake evenly, then put it back in the fridge, and let it chill for another 2 hours until fully set. Garnish it with sprinkles, then serve immediately, and enjoy!
