Add 2 tbsp avocado oil to a hot skillet and saute the minced garlic for a few seconds. Once fragrant, add the ground pork and cook until almost done. Next, add the shredded carrot, cabbage, and sliced shitake mushrooms. Cook until vegetables are wilted. After this, add the diced tofu and continue to cook for two to three minutes. In the meantime, make the sauce. Combine 1 tbsp cooking wine, 1 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp hoisin sauce, 1 tsp white pepper, and 2 tsp cornstarch in a small bowl and mix until well combined. Pour the sauce into the mixture and give it a good mix. Season with salt as needed.
Just before you remove it from the heat, stir in the chopped green onions. Once done, let it cool down to room temperature. Now, start wrapping them up. Take a spring roll sheet, add 3 tbsp of the filling near the end of the sheet, then fold one end over the filling. Next, fold the left edge over right up against the edge of the filling, then fold the right edge over like an envelope. Finish by rolling tightly until the flap seals itself against the roll. Brush the spring oil with oil, then set aside. Repeat until you finish up the filling. Once done, air fry them at 400 degrees F for 10 to 15 minutes, flipping halfway through.
