Heat 1 tbsp olive oil in a large skillet over medium-high heat. Once heated through, add 1 lb ground pork. Break it up and cook for four minutes or until well browned. Once the meat is almost brown, stir in 3 cups of cole slaw mix along with the chopped green onions, minced garlic, and 1 tsp grated ginger. Once things are soft, add 2 tbsp soy sauce and 2 tsp toasted sesame oil. Stir to combine, then turn off the heat.
Let the meat mixture cool down for a couple of minutes while you get the egg roll wrappers. Brush two edges with some water, then add two to three tablespoons of the meat filling on the inside going diagonally. Bring in the two corners that have been brushed with water, bring up the dry end, then roll it up. Place it on a parchment paper-lined baking sheet and continue this until you finish up the meat filling.
Once done, spray the tops of the egg rolls with some cooking spray, then place them, oiled side down, into the air fryer basket (leave a space between the egg rolls). Now, spray the tops with cooking spray, then air fry them at 350 degrees F for seven minutes. After seven minutes, flip them over, give them one more spray, and air fry them for another five minutes. Serve with your favorite dipping sauce. Enjoy!
