Start by cutting the cabbage into quarters, then remove the core. Cut each quarter cabbage crosswise and as thinly as you like. Cut in half. Do the same process with the red cabbage. Transfer them into a large bowl.
Peel the carrots, then shred into small pieces using a box grater. Transfer the shredded carrots to the same bowl as the cabbage.
Make the dressing. In a small bowl, add 1/2 cup of mayonnaise, 1 tablespoon of honey, 1 tablespoon of apple cider vinegar, 1 tablespoon of Dijon mustard, salt, and pepper. Mix all the ingredients until well combined.
Pour the dressing over the salad and mix until well incorporated. Place in the fridge for a couple of minutes to let the flavors soak into the vegetables. Serve chilled.
