Step 1
Preheat your oven to 350°F, then grease a 9×13-inch baking dish with nonstick cooking spray, and set it aside. Remove the meat of the chicken and discard the bone, then put them in a large bowl, and beat them with a hand mixer for a few seconds to shred the meat.
Step 2
Pour 1/3 of 1 can or about ½ of enchilada sauce into the bottom of the baking dish, then spread them evenly, and then pour in a whole can of enchilada sauce over the shredded chicken, and add in the drained tomatoes and green chilies, and 1 cup of shredded cheese.
Step 3
Give them a good mix, then fill each tortilla with ½ cup of the chicken mixture in the middle, and roll them up as tightly as possible as shown in the video. Place them in the baking dish with their seam-side down, then pour the remaining sauce over the enchiladas evenly, and sprinkle the remaining ½ cup of shredded cheese on top.
Step 4
Cover the baking dish with aluminum foil, then bake the enchiladas in the preheated oven for about 20 to 25 minutes, and remove the foil at the last 5 minutes of cooking. Once done baking, remove them from the oven, then let the enchiladas for about 5 minutes, and serve topped with sour cream, cilantro, and other toppings of your choice. Enjoy!
