Ingredients for Cheesy Enchiladas:

  • Corn tortillas
  • tomatoes
  • garlic cloves
  • ¼ white onion
  • Jalepeño, serrano, or poblano pepper
  • 1 tsp chicken bouillon or ½ tsp of salt
  • ½ cup of water
  • Mexican oregano flakes, optional
  • 8 ounces of Queso Fresco
  • Cream fresca or sour cream

How to Make Cheesy Enchiladas from Scratch:

Step 1

First off, roast the garlic cloves, onions, tomatoes, and peppers, then add them to a blender, and season them with chicken bouillon or salt. Pour in the water, then blend everything until smooth and combined.

Step 2

Place a pot on a stove over medium heat, then add about 1 tablespoon of oil, and pour in the blended sauce. Give them a good stir, then bring the sauce to a boil, and lower the heat to keep it warm.

Step 3

While waiting for the sauce to finish cooking, heat the oil in a large and deep pan, then fry the tortilla for about 5 seconds per side, and transfer them to a plate.

Step 4

Add some oregano to your cheese if you want and give it a good mix, then dip the fried tortilla in the sauce, and lay it on a plate dry side down.

Step 5

Add some cheese on one side, then quickly roll it, and repeat with the remaining ingredients. Pour the sauce over the enchiladas, then drizzle some sour cream sauce on top, and sprinkle with more cheese. Serve and enjoy!
