I had never thought of it, but I’m glad I stumbled across this crispy smashed baby carrots with parmesan recipe. It turned out incredibly delicious! I could not count how much I had eaten. I would have finished the whole tray if my mom had not stopped me. It was that good.

Making this appetizer recipe is super easy. You start by boiling the carrots first just as you would with potatoes. Next, you are going to lay them on your baking sheet filled with cheese and then smash them. Brush them with oil, sprinkle your favorite seasoning, then bake in the oven. It will turn out crispy and flavorful! Serve it with your favorite sauce.

Add the baby carrots to a pot filled with water. Place over heat. Cook the carrots until they are tender. Once done, strain them and rinse with cold water to stop the cooking process. Dry them very well.
Line a baking sheet with parchment paper. Sprinkle shredded parmesan cheese evenly.
Lay the cooked baby carrots on top of the parmesan cheese. Make sure to put spaces in between each piece.
Using the bottom of a clean flat bottomed glass, smash the carrots to flatten.
Brush the carrots with oil.
Sprinkle the carrots with ranch seasoning mix.
Bake for 400F for about 20 minutes.
