Ingredients:

  • 3/4 cup all-purpose flour
  • 1 1/2 cup oats
  • 1 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup unsalted butter
  • 1/4 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 medium grated carrot
  • 1/2 cup toasted walnuts

Cream Cheese Frosting:

  • 8 oz cream cheese
  • 1 1/2 tbsp honey
  • 1/2 tsp vanilla extract

Directions:

Step 1

Preheat your oven to 350 degrees F and line your baking sheet with parchment paper. Set it aside. Next, combine 3/4 cup all-purpose flour, 1 1/2 cups oats, 1 tsp cinnamon, 1/2 tsp salt, 1 1/4 tsp baking powder, and 1/4 tsp nutmeg in a large mixing bowl. In another bowl, cream 1/2 cup unsalted butter, 1/4 cup brown sugar, and 1/2 cup sugar together, then add two eggs at a time. Next, stir in 1 tsp vanilla extract, then add the flour mixture, the toasted and chopped walnuts, and the grated carrot. Fold together until combined.

Step 2

Scoop 1-inch balls from the mixture using an ice cream mixture onto the lined baking sheet. After this, use your thumb to make an indentation into the center of each cookie. Place the cookies in a 350 degrees F oven and bake them for ten to eleven minutes. After baking, press the center again while still warm, then transfer them to a cooling rack to let them cool completely. In the meantime, make the frosting. Combine 8 oz cream cheese, 1/2 tsp vanilla extract, and 1 1/2 tbsp honey in a small bowl. Mix until combined. Once done, scoop it into the center of each cookie. Dust with some cinnamon and serve.
