Fried rice is one of my absolute weaknesses and it is something that I would always order whenever we eat outside or order takeout. One of my favorites is a Chinese-style chicken fried rice infused with delicious flavors of soy sauce and contains lots of veggies.

Chicken Marinade
For Stir-Frying
Seasoning
Step 1
Cut the chicken into small pieces, then add them to a bowl, and add in the cornstarch, soy sauce, vegetable oil, and baking soda. Mix everything until well combined, then set it aside, and let it marinade for about 30 minutes.
Step 2
Crack the eggs in a bowl and beat them well, then heat a wok, and add about 1 tablespoon of vegetable oil. Move the wok around until the bottom is coated, then once the wok is smoking, pour in the egg and wait for it to cook for about 30 to 50 seconds until it gets fluffy.
Step 3
Break the egg into small pieces, then transfer it to a plate, and set it aside. Add more oil to the wok, then heat it, add the chicken, and saute it for about 1 to 2 minutes. Push the chicken to the side, then add in all the veggies, and stir fry for about 2 to 3 minutes until translucent.
Step 4
Season them with some salt and give them a good mix, then transfer them to a separate plate or bowl, and set them aside. Turn the heat to high, then let the wok heat for about 15 seconds, add 2 tablespoons more vegetable oil, and then add in the rice.
Step 5
Break the rice, then stir fry for around 3 to 5 minutes, and in the soy sauces, salt, and pepper. Mix the rice well, then put all of the cooked ingredients back into the pan, and continue to toss everything together until well combined. Let it cook for about 2 more minutes until the flavors are infused, then add the spring onion, and serve immediately. Enjoy!
