Ingredients:

  • 1 tbsp oil, for frying
  • 1 lb medium ground beef
  • 1 small onion, chopped
  • 3 cloves of garlic, chopped
  • 1 large can of tomato sauce
  • 1 tsp salt
  • 2 tsp ground black pepper
  • 1/4 tsp hot pepper flakes
  • 1 tbsp Italian seasoning
  • 1 cup whole grain rice, uncooked
  • 1 medium head of cabbage, sliced thinly
  • 2 cups grated mozzarella
  • 1 tsp dried parsley, for garnish
  • 2 tbsp parmesan, for garnish

Directions:

Step 1

Heat 1 tbsp oil in a large pan over medium-high heat, then add the ground beef. Break it up and cook for five minutes, or until browned. Next, move the ground beef to the other side of the pan, then add the chopped onion and three cloves of minced garlic. Saute on that side until the garlic is fragrant, then stir them in with the meat. After this, add one large can of tomato sauce (reserve some for later), mix, then season with 1 tsp salt, 2 tsp ground black pepper, 1/4 tsp hot pepper flakes, and 1 tbsp Italian seasoning. Stir everything together until combined.

Step 2

Next, add 1 cup of uncooked whole-grain rice and mix it in. Turn off the heat. Add a layer of sliced cabbage at the bottom of your casserole dish, then add a layer of the rice mixture. Repeat the layers twice, then pour the reserved sauce over the top. Cover the casserole dish with aluminum foil, place it in a preheated 375 degrees F oven, and bake for 45 minutes. Once done baking, remove the foil and sprinkle 2 cups of grated mozzarella. Put it back in the oven and bake for another five minutes until the cheese fully melts. Garnish with 1 tsp dried parsley and serve.
