Ingredients:

  • 2 lb ground beef
  • 1 yellow onion, diced
  • 1 1/2 tsp salt
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp oregano
  • 3/4 tsp garlic powder
  • 1 (28 oz) can diced tomatoes
  • 1 tbsp flour
  • 12 corn tortillas
  • 2 cups shredded cheddar cheese

Directions:

Step 1

Preheat your oven to 350 degrees F and grease your baking dish with cooking spray. Set it aside. Heat a skillet over medium heat, then add the ground beef. Break it down and cook until brown along with the diced onion. Season with 1 1/2 tsp salt, 1 tbsp chili powder, 1 tsp cumin, 1/2 tsp oregano, and 3/4 tsp garlic powder. Mix well. Stir in one can of diced tomatoes, and cook for a few more minutes. Add 1 tbsp flour in the final minute just before you remove the meat from the heat.

Step 2

Next, char the tortillas over low heat to add extra flavor to the dish. Once done, set them aside. Now, assemble the casserole. Add a small amount of the meat mixture to the bottom, then add the first layer of tortillas. After this, add half of the meat mixture over, spread evenly, then sprinkle some shredded cheese. Repeat the layer, topping the casserole with lots of shredded cheese. Place the casserole in the preheated oven and bake for 30 to 40 minutes. Once done, cut it into squares and serve.
