Add the sliced chicken in a bowl, followed by the soy sauce, oyster sauce, dark soy sauce, sugar, baking soda, white pepper powder, cornstarch, and water. Mix everything until well combined. Add the oil and mix again.
Place a pan over medium-high heat and heat some oil. Once hot, add the mushrooms and cook for a little bit while continuously mixing. Add the rice wine and continue mixing until it cooks off. Season with salt and sugar. Stir fry until it looks moist, then transfer to a plate.
In the same pan add some oil and stir fry the onion and zucchini. Season with salt and sugar and stir fry for 20 seconds.
Add more oil to the pan, followed by the chicken and garlic. Stir fry until golden, then flip and cook the other side. When it is about 50% done, add the rice wine. Continue to stir fry until the rice wine cooks off. Add the dark soy sauce, oyster sauce, and sugar. Cook until the color is even, then add a little bit of water. Continue cooking until the water evaporates.
Bring back the onion, zucchini, and mushroom. Season with black pepper and mix well. Serve and enjoy!
