If you’re like me who loves bell peppers and is crazy about any recipe that involves them, then these stuffed bell peppers are perfect for you! You can make this dish for lunch or dinner and you can prepare them in larger batches if you want to feed a crowd or share it with your family.

Ingredients for Ground Beef & Rice Stuffed Peppers:

  • 1 cup of water
  • ½ cup of white rice, uncooked
  • 1/8 tsp of salt
  • 6 large bell peppers
  • 1-1½ pounds of ground beef
  • 1 medium yellow onion, diced
  • 2 tsp of minced garlic
  • 1 tsp of Worcestershire sauce
  • ½ tsp of Italian seasoning blend
  • ½ tsp of salt
  • ¼ tsp of black pepper
  • (32 ounces) jar of marinara sauce, divided
  • 1 cup of Italian cheese, shredded, divided
  • Freshly chopped parsley, for garnish

How to Make Ground Beef & Rice Stuffed Peppers:

Step 1

Place a medium pot on a stove over high heat, then fill it with water, and bring it to a boil. Add the uncooked rice, then sprinkle the salt, and put the lid on the pot. Allow the rice to cook over low heat for about 15 minutes, then turn the heat off, and set the rice aside for later.

Step 2

Place a large skillet on a stove over medium-high heat, then add the ground beef, and break it apart. Cook them until nice and brown, then add the diced onion, and continue to cook until soft and translucent, make sure to drain off the excess grease.

Step 3

Add the garlic, then continue to cook for 30 more seconds, and add the Worcestershire sauce, Italian seasoning, salt, black pepper, marinara sauce, cooked rice, and Italian cheese. Give them a good stir to combine, then turn off the heat, and set them aside while preparing the peppers.

Step 4

Cut off the top of the bell peppers and remove the insides, then pour in the remaining 8 ounces of marinara sauce into a crockpot greased with nonstick cooking spray. Stuff the peppers with the beef and rice mixture, then place the pepper on the crockpot standing right up as shown in the video, and proceed to prepare the rest of the peppers.

Step 5

Place the lid on the crockpot, then set it on low to cook for about 3½ to 4 hours or on high for about 2½ to 3 hours until the peppers are fork tender. Top them with some more cheese, then put the lid back on, and cook them on a high setting for an additional 5 to 10 minutes or until the cheese has melted. Sprinkle them with more chopped parsley, then serve, and enjoy!
