Step 1
Preheat your oven to 350°F, then grease a 9×13-inch baking dish with a nonstick cooking spray, and set it aside. Boil some water in a pot, then sprinkle some salt, and add the macaroni. Cook the pasta according to the package instructions or until al dente, then drain off all the water, and transfer it to a mixing bowl before setting it aside. In a mixing bowl, combine all of the cheese and set them aside, then place a heavy-bottomed saucepan on a stove over medium heat, and melt in ½ cup of butter.

Step 2
Add the flour, salt, Dijon mustard, and black pepper, then stir everything consistently to combine, and increase the heat to medium-high. Gradually pour in the milk while whisking continuously until there are no more clumps, then bring it to a boil, and immediately lower the heat to low. Let it simmer for about 3 to 5 minutes until it’s gently bubbling making sure to stir consistently, then turn off the heat, and stir in the cream cheese until melted and incorporated. Remove it from the heat, then add 3 cups of the cheese mixture, and stir them until melted.
Step 3
Pour the sauce over the cooked macaroni, then mix everything until evenly coated, and pour half of it into the prepared baking dish spreading it evenly. Spread 1 cup of shredded cheese all over the top, then add the remaining macaroni over it, and the last cup of cheese on top. Put 2 tablespoons of butter on top, then put it in the preheated oven, and let it bake for about 30 to 40 minutes or until the top is golden brown and bubbly. Serve immediately and enjoy!
