To make these Christmas cookies, you will need butter, powdered sugar, vanilla extract, table salt, all-purpose flour, and cornstarch. The sprinkles are optional, but they make these cookies festive. When you make this recipe at home, be sure to use quality butter. It should be softened, but not melty or oily. You can also use salted butter to make these holiday treats – just reduce the salt to 1/4 teaspoon.

Start by preheating your oven to 325F and lining a baking sheet with parchment paper.
In the bowl of a stand mixer or a large mixing bowl if you are going to use an electric mixer, combine butter and powdered sugar and beat on medium-high speed for a stand mixer or high speed for a hand mixer until it becomes fluffy and creamy for about 5 minutes or more. To make sure everything is mixed, scrape down the sides and bottom occasionally.
Add vanilla extract and salt to the mixture and stir until well combined.
Get a separate bowl, and add the flour and cornstarch. Whisk well.
Turn the speed to medium-low and gradually add the flour. Stir until just combined.
Using a tablespoon-sized scoop, scoop the dough and roll it between your palms to make smooth balls. Place them on the prepared baking sheet, with about 1 to 2 inches spacing.
Slightly flatten each cookie with a fork. If the dough is sticking to the tines, dip it in powdered sugar first before pressing the cookie.
Add the sprinkles if preferred.
Place in the preheated oven and bake for 12 minutes. They will be light in color when done. Let them cool completely before removing them from the baking sheet.
