Place a pan over medium high heat. Add bacon grease and sear the beef in batches. Season with salt and pepper. Give it a minute before tossing it around. Remove some of the grease and transfer to a bowl. Repeat with the remaining beef.
Place a pot over medium heat. Add more of the bacon grease and onions. Cook until translucent. Next, add the bell peppers, chili powder, ancho chili powder, and smoked paprika. Stir everything until well incorporated. Constantly move it around until the spices are toasted, then add the tomatoes, ground cumin, garlic powder, and onion powder. Mix well for 30 seconds.
Add the oregano, tomato paste, brown sugar, Worcestershire sauce, and pepper. Stir and give it about 30 seconds.
Add the beef bouillon and corn flour with water to the pot. Mix well, then bring back the cooked ground beef. Stir until combined.
Add 2 cups of beef broth, minced garlic, and jalapeno. Make a taste test and adjust seasonings if needed. Place the lid, lower the temperature to medium low, and cook for 1.5 hours.
Add the beans and mix well. Place the lid and let it simmer on low for 20 minutes.
