When I and my siblings were still kids, my Mom used to make divinity fudge for us every Christmas, and now it’s my turn to continue the tradition, and actually give it a try. My Mom’s shoes are big enough to fill in so the pressure is really evident, and I have to impress her and the whole family with my take on this classic dessert.

I wanted to find out how to make this treat on my own before I try to tweak the ingredients, and when it comes to old-fashioned and original recipes, I always run to one of my favorite content creators of all time, The Hillbilly Kitchen – Down Home Country Cooking on YouTube. The steps are super easy and the instructions were very clear.

Step 1
In a saucepan, add the ingredients of syrup #1, then give them a good mix, and heat them to 240°. In another saucepan, add the ingredients of syrup #2, then stir them well, and heat them to 280°. Ensure to stir them occasionally and keep an eye on them so they don’t burn.
Step 2
Add the egg whites to the stand mixer bowl, then beat them until stiff peaks form. When the 1st syrup is ready, turn the mixer on, slowly add the syrup, and scrape the sides. Continue mixing, then pour in the 2nd syrup, and keep mixing.

Add the vanilla and food coloring (if using), then scrape the sides, and beat for about 8 to 9 minutes or until stiff and sticky. Quickly add the nuts, then fold them together until evenly distributed and combined, and make sure to work quickly as it will become harder to mix as it cools.
Step 4
Transfer the mixture to a baking dish, then spread it evenly, and press it down the bottom firmly. Allow it to cool down completely until hardened and set, then cut into small bars, and serve. Enjoy!
