Add the diced apples in a bowl, followed by the 2 tablespoons of sugar, 1 teaspoon of cinnamon, and a pinch of salt. Stir and set it aside.
Make the brown sugar cinnamon mixture. In a small bowl, combine the brown sugar, ground cinnamon, nutmeg and salt. Mix and set aside.
Add the 4 tablespoons of unsalted butter in a small saucepan and melt until brown while continuously moving your pot to avoid burning. Once done, pour into a small bowl and set aside.
Make the batter. In a large bowl, add the sugar, vanilla, eggs, and browned butter. Whisk until fully combined. In a different bowl, sift the flour, baking powder, baking soda, and salt. Alternately add the dry ingredients and buttermilk to the batter, mixing after every addition.
Transfer half of the batter to a lined and greased loaf pan, then add half of the apple mixture and sprinkle some brown cinnamon sugar mixture on top. Add the remaining batter, apple mixture, and brown cinnamon sugar mixture on top. Bake at 365F for 45 to 55 minutes.
Once done baking, let it rest for about 10 minutes, then drizzle the glaze on top.
