Step 1
Place the raw pistachios onto a baking sheet lined with parchment paper, then spread them evenly in a single layer, and place them in a preheated oven at 300°F or 150°C. Allow them to toast for about 10 minutes, then roughly chop them, and set them aside for later.
Step 2
In a medium-sized mixing bowl, add the powdered milk and salt, then give them a good whisk until uniform, and set them aside. Place a medium-sized saucepan on a stove over medium-high heat, then add the water and sugar, and bring them to a boil.

Step 3
Lower the heat, then allow them to simmer over low heat for about 10 minutes before adding the butter, and stir them until the butter is melted. Turn off the heat and remove the saucepan from the stove, then add the vanilla extract to the mixture, and continue to stir to combine.
Step 4
Pour the syrup over the powdered milk mixture, then whisk them or use an electric hand mixer to beat them until smooth and well combined. Add half a cup each of the toasted pistachios and dried cranberries to the mixture, then fold them in until evenly combined, and pour the mixture into an 8 or 9-inch square pan greased with butter.
Step 5
Spread the fudge mixture evenly and smoothen out the surface as much as possible, then sprinkle the remaining pistachios and cranberries all over the top, and lightly press them down. Cover the fudge, then set it aside, and let it cool down to room temperature. Cut into small squares, then serve, and enjoy!
