There are tons of soup recipes out there, but this might be one of my favorites because I love tomatoes and cheese. The best thing about this recipe is that it doesn’t require a lot of chopping and washing up, making it a great option for busy days when you need to get dinner on the table quickly. Place a large pot over medium heat and melt the butter. Once melted, add the onions and cook until translucent for about 3 minutes.
Add the minced garlic and cook until fragrant for a minute. Next, add the Italian seasoning, red pepper flakes, and flour. Whisk everything to combine, then cook for another minute.
Pour the broth, followed by the tomatoes, tomato paste, and tortellini. Mix it all together, then let it come to a boil. Once boiling, lower the heat to a simmer until the tortellini is cooked for about 10 minutes.
Add the cream and freshly grated parmesan. Mix until well incorporated. Next, add the spinach, then season with salt and pepper. Make a taste test and adjust seasonings if needed. Garnish with thinly sliced basil, then serve. Enjoy!
