Wash and peel the potatoes and carrots, then chop them into bite-sized pieces, and chop the onion as well. Roughly chop the mushrooms and finely chop the celery, then set them aside. Place a Dutch oven on a stove over medium-high heat, then melt some butter before adding the chopped veggies, and saute them until softened. Add some flour, then stir and cook for around 1 to 2 minutes or until the raw taste is gone, pour in the turkey stock along with some water.

Season them with salt and pepper to taste, then add any of your favorite seasonings if you like, and stir them well to combine. Add some heavy cream to thicken the consistency and bring the soup to a boil, then add the chopped spinach and chicken along with leftover steamed broccoli chopped into small pieces. Give them a good stir, then allow it to simmer for 15 minutes, and add the shredded cheese. Mix them well until melted and combined, then serve, and enjoy!
