Preheat your oven to 350 degrees F and grease and line a 9 x 13 baking dish. Set it aside. Next, make the streusel topping. In a bowl, add 3/4 cup all-purpose flour, 1/3 cup dark brown sugar, 1/2 cup quick-cooking oats, 1/4 tsp ground cinnamon, and 1/4 tsp salt. Mix, then add the cold, cubed butter. Work it with your hands until the consistency becomes lumpy. After this, mix in the chopped pecans. Set it aside.

In another bowl, transfer the diced apples and add 2 tbsp dark brown sugar, 2 tbsp all-purpose flour, 1/2 tsp ground cinnamon, 1 tbsp melted butter, and 1 tbsp fresh lemon juice. Mix well together, making sure the apples are well coated. Set it aside.
Now, for the blondie layer, combine 1 2/3 cups dark brown sugar, 3/4 cup melted butter, two large eggs, and 2 tbsp vanilla extract in a bowl and whisk them together. In a separate bowl, combine 1 1/2 cups all-purpose flour, 1 tsp baking powder, and 1 tsp salt. Once done, add it to the wet mixture and whisk until smooth.
Now, assemble the blondie dessert. To your prepared baking dish, add the blondie layer at the bottom evenly, then the apples, and finally, the streusel at the top. Put it in the preheated oven and bake for 45 to 55 minutes.
