In a baking dish, add the sliced apples, 1/2 cup sultanas, 1/2 cup brown sugar, and 1 tsp cinnamon. Mix well and bake for 25 minutes at a 350 degrees F oven. In the meantime, make the other components of the cheesecake. Add 12 pcs digestive biscuits in a food processor along with 1 cup of melted butter. Blitz them and set them aside. Next, add 3/4 cup plain flour, 1/2 cup brown sugar, 1/2 cup oats, 1/2 cup butter, and a pinch of salt. Process them until combined, then set aside. After this, in the same processor, add 2 tubs of cream cheese, 1 tub of mascarpone, 1/2 cup of white sugar, and vanilla pod. Cover with its lid and process until smooth, then add three eggs. Continue processing until combined.

In a springform pan lined with parchment paper, add the blitz digestive crackers first, tapping them down the bottom, then evenly layer the mascarpone mixture. Once done, layer the baked apples all over the top, then sprinkle some crumb topping. Bake for one hour at 325 degrees F oven. Once done, let it cool a bit, then remove it from the springform pan.
