This Mexican lasagna recipe by Al Dente Diva will be the star of your dinner table! Even picky eaters will love this delicious meal. I made it last weekend, and everyone finished it in just a few minutes. It’s cheesy, beefy, and flavorful – one slice will not be enough for you. Start by adding your ground beef to a pan over heat. Break it into pieces and cook until browned. Next, add the taco seasonings and mix them well.
Shred the cheese and combine them together.
Spray a baking dish with some oil. Put down a couple of flour or corn tortillas, then add about half of the taco seasoned ground beef and some of the rinsed and drained beans. Next, sprinkle a generous amount of cheese.
Make the second layer. Add more tortillas on top of the cheese. You can cut them in half or small pieces to cover the gaps. Add the remaining seasoned ground beef, beans, and almost all of the remaining cheese (save some for the top).
Add the last layer of tortillas and the cheese you saved earlier. Place it inside the oven and bake at 375F for about 20 minutes or until the cheese is melted.
After baking, let it cool for a couple of minutes before you cut it so it doesn’t fall apart. Slice and serve it with cream cheese. Enjoy!
