This technique is so cool and smart because you can save oil and money at the same time, plus this fried chicken turns out to be more flavorful as it cooks in its own oil and is super crispy, too. Step 1
Wash and clean the chicken well, then pat them dry, and cut the flesh of the chicken several times but not all the way through. Season both sides with salt and pepper to taste or with other seasonings that you want, then put them in the fridge for about 6 hours, and allow them to marinate, but you can skip this step if you want and proceed to cooking. Now, place a nonstick pan on a stove over medium heat, then place the seasoned chicken with its skin side down, cover the pan, and allow it to cook for about 10 minutes or until it starts to render some oil.

Step 2
After 10 minutes, remove the lid, then continue to cook the chicken on its own oil for 20 more minutes uncovered, and once the skin is nice and crispy, carefully flip the chicken over. Cook the other side of the chicken until nice and brown and cooked through, then remove the chicken from the pan, and transfer to a plate. Let it rest for at least 3 minutes, then serve, and enjoy!
