I just came back from a trip to Hawaii and loved their Hawaiian style macaroni salad. I’ve been craving it so much that I looked for recipes online. Good thing I found this recipe by Keeping It Relle on Youtube. Now I can make a big batch at home and serve it to my family. It’s easy to make, tangy, and simply delicious. Fill a large pot with water and add salt and a splash of oil. Let it come to a boil, then add the elbow macaroni. Cook according to package instructions. You want to cook it just past al dente. This will allow the noodles to absorb the flavors better. Once done, drain the noodles and rinse them with water to stop cooking.
Toss the warm macaroni in a bowl and add 2 tablespoons of apple cider vinegar. Mix until well incorporated, then set it aside and allow it to cool slightly.
In a large mixing bowl, add 1 cup of mayonnaise, 1/2 cup of milk, 1 tablespoon of granulated sugar, salt, and black pepper. Whisk to combine all ingredients.
Add the mayonnaise mixture to the macaroni noodles and whisk until well combined. Next, add the grated carrots to the mixture and mix.
Cover the bowl with plastic wrap or plate then place in the refrigerator for 4 hours or overnight until cooled. Serve it cold and enjoy!
