Preheat the oven to 400 degrees F and grease your muffin pan with nonstick oil spray. Next, take the corn off the cob in a large mixing bowl and reserve half a cup to be used later. In another bowl, combine 1 1/2 cups of all-purpose flour, 1 1/4 cups of cornmeal, 1/4 cup + 2 tbsp sugar, 2 1/2 tsp baking powder, 3/4 tsp baking soda, 2 1/4 tsp kosher salt, and 1 1/2 tsp freshly ground black pepper. Mix these all together well, then add 1 1/2 cups of corn and stir to combine. For the wet ingredients, combine two eggs, 1 yolk, 3/4 cup of sour cream, 2/3 cup of milk, and 1/2 cup melted unsalted butter. Stir to combine, then add it to the dry mixture. Mix well together until dough forms.

Scoop out the mixture with an ice cream scooper and divide the batter on each muffin cup. After this, sprinkle the reserved corn and flaky sea salt on top of each muffin. Put them in the preheated 400 degrees F oven and bake for 18 to 20 minutes or until the tops are golden brown. While waiting, make the honey butter spread. Put two sticks of unsalted butter in a standing mixer and beat it until the color becomes lighter. While beating, drizzle in some honey and a pinch of flaky salt.
