If there’s a sandwich that I could eat every day, it would probably be these classic cheesy tuna melt by Cowboy Kent Rollins! The melted cheese and tuna mixture on toasted sourdough bread is just fantastic. It’s very quick and easy to make – perfect at any time of the day. Open the tuna can and drain it well. Place it in a medium-sized bowl. Add the mayonnaise, horseradish, Worcestershire sauce, green onion, relish, and capers. Season it with salt and pepper. Taste and adjust seasonings if needed. Cover and set it aside.
Preheat your cast iron skillet over medium heat.
Spread butter on both sides of the bread slices. Put the bread in the preheated skillet and toast until halfway toasted. Flip over and sprinkle with 1 tablespoon of parmesan cheese on the slices. Continue toasting until the opposite side is halfway toasted. Once done, remove from the skillet and place on a plate.
Sprinkle about 2 tablespoons of cheddar cheese onto 2 bread slices. Add about half of the tuna mixture on top, followed by 2 tablespoons of mozzarella cheese. Top each one with the remaining bread slices.
Place the sandwiches back into the skillet and cook until golden brown and crispy. Flip and lightly press the sandwich down using a spatula to make it crispy and golden brown. You can flip it several times to achieve the desired color. Serve immediately. Enjoy!
