Just when I thought that pineapple upside-down cakes couldn’t get any better, I discovered these mini muffin versions that come in fun sizes and is probably more delicious than the original ones. I just can’t get enough of this yummy goodness and I kept on eating until all servings is gone because they’re that delicious. This is perfect to serve on parties, gatherings, holidays, and after a hearty, heavy, and savory meal, or simply whenever you crave it. Step 1
Melt the butter, then pour it at the bottom of each muffin cup evenly, and add the sugar on top of each. Spread the sugar out while mixing them together in the process, then add a slice of pineapple at the bottom, and place a cherry at the center of each. In a large mixing bowl, add the cake mix along with the 3 eggs, pineapple juice, ½ cup of oil, or whatever ingredient is stated in the package instructions, and then you can substitute the water with pineapple juice.

Step 2
Whisk them all together until incorporated and well combined, then preheat your oven to 350°F at this point, and then start scooping the batter into each muffin cup filling them evenly. Place them in the preheated oven, then allow them to bake for about 30 minutes or until a toothpick inserted at the center comes out clean, and then allow it to cool down before unmolding. Once ready to unmold, simply place a tray or plate on top of the muffin pan making sure it’s completely covered, then flip it over to unmold the cakes upside down, and serve. Enjoy!
